In the rich cultural landscape of Japan, castles were the historic homes of the country’s legendary Samurai warriors and enigmatic Geishas. Among these iconic structures, a smaller castle, known as a “JINYA,” held its own unique significance.
It’s this legacy that inspired the founding of the original Robata JINYA restaurant, which opened in the Ebisu district of Tokyo in 2000. One JINYA, now serves as the site to the High School in Saijo City where the founder himself once attended and inspired the creation of SAIJO Hand Rolls and Kushiyaki, that pays homage to the storied past of the JINYA and the authentic craftsmanship of traditional Japanese cuisine.
